ROAST POUSSIN CHICKEN
3 poussin chicken
5 potatoes (any kind)
Hand full of broad beans
Hand full of continental parsley
1 tsp dried oregano
Wash and cut poussin's in half. Place in an oven dish, along with peeled potatoes sliced in quarters long ways. Chop onion and sprinkle evenly. Season with olive oil dried oregano salt and pepper. Sprinkle parley all over before it goes in the oven.
Preheat oven at 180*C
Cook for 40 mins or until chicken is golden.
Mean while you can make a salad of any kind to serve with roasted poussin .
