SEAN CONNOLLY’S WATERMELON SALAD
Whilst visiting my friend in Dubai, I was lucky enough to be welcomed into Sean Connolly's kitchen at 'Dubai Opera'. The incredible restaurant was magical with the way they mixed traditional ingredients in a very modern setting. I adore watermelon on its own as a fruit, so I was intrigued to see how Sean introduced savoury items such as tomatoes and cheese to make this a stand out dish on its own. I would serve as an entree or side salad to a meal.
Makes enough for 4 people
800g Watermelon, 1 inch diced
160g Strawberries, sliced
160g Cherry tomato, halved
160g Pomegranate seeds
160g Soft feta cheese
1 Large red chili, finely sliced
1 Small bunch of mint, picked and roughly torn
Good quality white wine vinegar
Extra virgin olive oil
Flaky sea salt and freshly cracked white pepper
Combine the watermelon, tomato, strawberry, pomegranate seeds and chili in a large mixing bowl. Dress with the vinegar and olive oil, using about 1/3 vinegar to 2/3 oil. Add the mint and season well with salt and pepper. Toss together then arrange on a serving plate and finish with chunks of feta.
