What a fun afternoon we all had on the school holidays, Jessica, Matilda, Tabathia and Zara.

I love being in the kitchen with children, their energy and enthusiasm towards discovering all the ingredients makes my heart melt, these girls really wanted to get involved and get there hands messy.

Meeting Mr Figaro.

I like to make my Gnocchi a little different and I use ricotta cheese as the base ingredient. See below the recipe.

500g Buffalo Ricotta

50g Plain Flour

1 Egg

50g Parmesan Cheese

50g Sea Salt and Freshly Cracked Pepper

Pass the ricotta through a food mill onto a lightly floured bench, season with salt and white pepper and make a well in the centre.

Mix the flour and finely greater Parmesan and sprinkle over the ricotta.

Crack the egg into the well and mix all ingredients together.

Kneed gently to make a dough, roll out into a Salinger about as thick as your thumb, cut into 4cm lenghts and place on a floured tray.
