Adam D'Sylva's Apricot Turkey
It isn't Christmas time without a Turkey and this apricot stuffed roll is so flavorsome and tender.The burnt butter and sage sauce finishes it of wonderfully. We used a pre-stuffed and rolled turkey from Kevin's Fresh Poultry at the Prahran Market but you can also make your own.
1 large stuffed turkey breast roll
1 dozen peaches
1 dozen shallots
Salt and Pepper to taste
Rub the turkey roll with olive oil and salt.
Place on a roasting dish and place in preheated oven for approx. 1.5 hrs, depending on the size.
Slice peaches in half, remove pip and place face down on roasting dish.
Place in oven for approx. 10 minutes.
Separate the leaves from the Sage and add to a fry pan with butter, stirring over a medium heat until browned.
Remove the netting from the turkey and slice.
Place turkey slices on a serving dish, along with the peaches and squeeze the shallots from their skin onto the dish.
Drizzle with the juices from the baking tray and pour over the sage and butter sauce to serve.
