Adam D'Sylva's Asparagus Salad
Adam's Asparagus Salad is a wonderful addition to the Christmas spread, perfect as a side dish to seafood, poultry or red meat. The bright green adds a pop of colour and looks wonderful when placed on the table. Ingredients Asparagus Dill 2 Lemons Feta Extra Virgin Olive Oil Salt and Pepper
Method Remove the ends off the Asparagus. Blanch the asparagus in salted boiling water for five minutes. Remove asparagus and place neatly on serving dish. Over the top sprinkle the roughly chopped dill and crumbled feta. Add the zest from both lemons, squeezing over the juice from one of them. Drizzle with olive oil, salt and cracked pepper to serve.
