Adam D'Sylva's Christmas Scallops with Capsicum
Scallops w/ Capsicum For the scallops Ingredients Dozen scallops in shell Garlic Extra Virgin Olive Oil Salt
Method The shell acts as a mini pan to cook the scallops. Finely slice the garlic and mix in a bowl with olive oil and salt. Drizzle a tablespoon over each scallop. Carefully place Shells onto a hot barbeque for 6-10 minutes or until cooked through. Remove from the barbeque and top with capsicum mix.
For the Capsicum Ingredients 1 red Capsicum 1 orange Capsicum 1 yellow Capsicum Fresh Basil 100ml Olive Oil 50ml Red Wine Vinegar Salt and Pepper
Barbeque the capsicums, rotating until skin becomes evenly charred. Remove and place in a bowl. Cover with cling wrap and leave to sweat for 30 minutes. Remove the skins and dice capsicum into 1cm pieces. In a bowl mix the capsicum, torn basil leaves, olive oil and red wine vinegar. Add salt and cracked pepper to taste.
