Winter is just around the corner and for those of you who don’t live in Melbourne, it is freezing throughout the season. When the frost takes over the city, so does the common cold. This 'Chicken Broth' is one of the oldest (and best) cold remedies I like to make for my family whenever one of them starts feeling sick. I also love the smell of this soup simmering away in my kitchen, a smell that reminds me of seasons past & warm evenings in the kitchen surrounded by my family while cooking. I like to make this soup in a large batch because whatever we don't end up eating that day can be frozen for a later date. During winter its great to have in your fridge/freezer to pull out for lunch and dinner on those days you don’t feel like cooking. You can also serve this with pasta tortalini or rice if you are feeding lots of hungry mouths!


1 whole fresh chicken (without skin)

5L water

1 large brown onion

4 medium carrots peeled

1 parsnip peeled

1 potato peeled

3 celery sticks

1/2 bunch of fresh continental parsley

1 tomato

Sea salt flakes


Wash whole chicken, take the skin off

Add the chicken to a large pot & add water

Once the water with the chicken is boiling, skim off the froth and add the rest of the ingredients

Add salt and cook for 90 mins
