PASTA PENNE in FRESH TOMATO SAUCE
Like every child of an Italian family I grew up eating simple and fresh pasta’s. Fresh pasta is truly beautiful but I often don’t have the time, so I cheat a little and rarely make my pasta from scratch (shh don’t tell). There are so many great pasta options (fresh or dried) at your deli or grocer to choose from, making this a quick, easy and delicious dinner option.
250g pasta penne
2 tbs extra virgin olive oil
4 garlic cloves, finely sliced
12 diced fresh tomatoes or 400g can diced tomatoes
Sea salt flakes to taste
½ bunch of fresh basil
Shaved parmigiana to serve
Heat oil and garlic on a low heat for 2-3 minutes or until browned.
Add the tomatoes, two thirds of the basil, and sea salt and let simmer for 30 minutes.
Cook the pasta (as per instructions) in salted water.
Serve with fresh basil leafs and parmigiana... Yum 💋
