White Bean & Tuna Salad

Finally it is Spring!! It's now time for fresh and light recipes and using the seasonal produce that comes with the change of season. Here's a lunch that is quick and easy. The cannellini beans are high in protein and fibre and low in fat, making it a fantastic option if you need to whip up something quick and healthy. 

Ingredients

125g baby spinach leaves

375g can cannellini beans, drained

375g can tuna in oil, drained

1 Lebanese cucumber, chopped

2 tomatoes, chopped

2 tablespoons olive oil

2 tablespoons lemon juice

Salt flakes to taste

Cracked pepper

½ red onion, chopped

4 tablespoons chopped flat leaf (Italian) parsley

Hand full of rocket leaves

Method

In a large bowl combine spinach, rocket, beans, tuna, cucumber, tomato & parsley

In small bowl mix the oil, lemon juice and pepper.

Pour over the salad and toss.

Serve with bread
