WINTER BEEF SOUP

This winter season I'm really enjoying making hearty soups, I love having soups for lunch or dinner. They can be light or heavy and always fill you up. I find them easy and quick to make when I'm having a busy day. Boil the water, chop the ingredients up and let it cook. 

INGREDIENTS

  • 6 Osso Bocco

  • 1 Carrot

  • 1 Sweet Potato

  • 1 Onion

  • 1 Can peeled Tom

  • 1 Cup of Barley

  • 1/4 Cabbage

  • 2 Small Potato

  • 2 Green Bell Peppers

  • 2 Tomatoes 

  • 4 Cloves Garlic

  • 5 Sticks Celery  

  • Hand full of Bay Leaves

METHOD

  • Boil large oil of water with Osso Bocco

  • Once boiled add all chopped ingredients to boiling water, seasoning with Salt and Pepper.

  • On a medium temperature allow to cook for 45 minutes

  • Serve with bread or you can try adding some Veal meatballs. (Simply mix 3 eggs, Bread Crumbs, Parmesan Cheese and finally chopping Parsley. Roll in to small balls with Veal Mince and pan fry and add to soup.)
